Finding the Forgotten Child
I wonder how many of us have current issues in our lives and don't connect with past events from childhood? I know I didn't, not until I started talking with Jay Pee. Jay Pee aids individuals with getting in touch with their forgotten child to heal current issues they may be dealing with. Those issues can be physical, emotional, mental, or spiritual.
Ever since I was about 9 or 10 I had leg pains, bad leg pains. My mom use to massage my calfs for me at times because the pain was so bad. I can remember the pain just from her massaging them use to cause me to twist and turn. Jay Pee had me get in touch with the little girl who went through all that pain.
I started talking to him about how my dad didn't like to be disturbed when he watched TV and little things would get someone yelled at. Due to this as this young girl sitting on the couch I would move very slowly, like inch by inch so I wouldn't get yelled at. This caused tension in my body and specifically my legs. My dad also worked nights and to get to the bathroom we had to go through a hallway that shared my parents bedroom. Well the floors would creek and he would yell at the perpetrator. By tip toeing through the hallway I found that the floor didn't creek. This also caused tension in my legs from trying to be so careful while scared at the same time. We also uncovered the fact that I remembered my dad complaining about leg pains. He was born with cerebral palsy and even though he went through many surgeries as a child he still experienced pain in his right leg.
That was not the only forgotten child I encountered, but was the one that made a big difference in my life. You see even as an adult I would always have leg pains, it seemed to be mainly right before a rain. After my session with Jay Pee and talking about my situation with my dad the leg pains stopped. I can not remember the last time I had those unexplained leg pains.
Jay Pee explained to me that our bodies hang on to various episodes in our lives. These often lead to issues you may experience either physically, emotionally, mentally, or spiritually. Living on Wheels
Recently I was visiting with friends I had not seen in a while. A young couple with a toddler started telling me about tiny houses, which I have never heard of. Intrigued by what I heard I went home and started watching various videos on tiny houses. From there I started watching videos on RV vans, RV buses, and RVs.
We have a plan to live a lifestyle free from a house, mortgage, and stuff. Currently our house is 1,500 SF and with me researching, blogging, the magazine, creating organic skin care products, the podcast, and speaking I want something smaller. I want less to have to clean and more time to do what I love and that is helping others live a happy, healthy, natural life.
So guess what?? You all get to come with us on this journey from the start. We are not sure what we are going to go with as far as a dwelling, but know we want to be able to travel and take it with us. First off let's start with the tiny house, I reallylike love this idea.

Tiny Houses
I love the concept of a tiny house and how it can be customized. It interested me that these houses are created on a trailer allowing the owner to move it or take where ever they want to. The first videos I started watching talked about how a tiny house can be created to be less toxic than a regular house or a RV. Many dwellers also go off the grid with these houses, but also have incorporated components for on the grid living if they chose to.
Planning
When planning on building a tiny house the biggest thing to keep in mind is storage. I have seen some really creative things done in tiny houses when it comes to storage. Also items can be incorporated that have multiple purposes. For example a couch could be made to be storage and turn into a bed for guests.
You also want to take into consideration how many people will be occupying the tiny house. It is important to make sure there is enough room for everyone. Decide if you want to build the house for off grid or on grid living. Personally I think doing a combination is the way to go as it allows you more freedom to chose. Plus there will be no regrets later.

Sleeping
All but one tiny house I have seen have lofts for sleeping one on either side of the house. This is one area of the tiny house that will have to be really planned out. Most have low ceilings and only allow for a futon mattress. Now I can deal with the futon mattress, but I want to be able to at least sit up and not bump my head. Accessing the lofts are done two ways, either by latter or stairs. The latter takes up less space, but can be a challenge for some individuals. I like the idea of stairs plus they can be made to create storage rather inside the stair itself or be made into shelves. One of the lofts can be used as sleeping quarters for children or guests, can be used for storage or omitted all together.
Bathroom
This room takes on a whole new look in a tiny house. They are usually small, but you can design them the way you want. For instance what we want to do and is the most common is to have a composting toilet. This toilet looks like a regular toilet, but instead of a bowl it has a bucket. Sawdust is used after each use to cover up the smell and start the composting process. While this might not seem appealing there are other options, but I like this for conserving water, living off the grid, and living a more natural life.

Kitchen
While in many households the kitchens are big for gatherings and conversing they are of course smaller in a tiny house. Now this is totally up to you on how big or small the kitchen will be. For us the main thing to consider is having enough room to prepare my skin care products. I would also like to get rid of the microwave for various reasons, but the biggest one being that it removes all the nutrients from our food.
Some of the images I saw for utilizing the space under the stairs had the stove and sink there which I like. I really think we can go with a smaller fridge, like the ones in hotels. After all we just got back from Tennessee and the hotel we stayed at for two days didn't even have a fridge. We just used our cooler to keep all of our food and drinks cold and this is something I have seen others do as well. When it's just one or two people how much do you really need anyway?
I really like the layout of the kitchen in the photo and while it is hard to see the floor for the living room is raised with drawers underneath. If you click on the photo credit you can see images of various tiny houses. It really is amazing what people are doing with them.
Living Room
This is one of my favorite rooms and I have so many ideas and I'm sure I will get more. Because I want to have room for guests I want to have a couch like the one I mentioned earlier. There are all sorts of styles or some just make their own. I want to incorporate a section of the living room for a office space, but at the same time be able to convert it into sitting space for company. I love a fireplace and was happy to find that we could actually incorporate one into our tiny house. Of course it wouldn't be the size we have now and some of them do not even look like a fireplace. In fact they are so small you use twigs to create the fire and I did see one that used coal.
Wheels or No Wheels
While the tiny house I am discussing here is the one that is built on a trailer to move where you want you can also construct a tiny house without wheels. Which ever options you chose there are a variety of things you can do to term the size. First is to just determine how much room you want or need. If you have a piece of land in mind to build this will make this easier. Now if you want a tiny house on wheels you still have some flexibility, but not as much as if you were building on land. There are various size trailers one can use to build a tiny house including a flat bed.
Buying or Building
While a lot of the videos I watched people built their own tiny house you can also purchase one. Think about how much you have to spend this could be the determining factor for buying of building. If having a home that is less toxic is an important factor be sure you discuss this with the builder. When building you have total control of what materials go into your tiny house. Also by building your own tiny house you can incorporate recycled items into the house. Downside to this is you may not be able to get information on the toxicities of the materials chosen for use.
Research
Make sure to do your homework and research every aspect of living this type of lifestyle. I have been doing this for about a month now and have learned a lot. Be sure to check back as I will be sharing more on living on wheels, what I have learned, and what our plan is.

Getting Out of Debt

Hiding Money
Southern man is great with finances. Our first year of marriage he came to me and said, "I noticed you look at how much money you have to spend instead of much you can save." Hmmm he was right, to tell the truth I never thought about saving. He taught me that when I received more money not to include it in the balance of what was left from the last time I received money. This system he calls hiding money. Before I knew it I was saving money along with $400.00 to buy my daughter her own lap top for graduation.

I don't do charge cards, my first marriage we ended up with three maxed out credit cards and they are just to easy to use. If we don't have the money for it we save until we do. It is at the point now Discover is paying us to use their credit card. How does that happen? We use it and get points, but we have the money and pay it off right away. The points add up to $50.00 every so many months plus a 5% discount. We take that over to Bed, Bath and Beyond along with the 20% off coupon from them and buy what we need. Like I purchased a 16 lb turkey without thinking we did not have a roaster big enough, so guess what we did? You got we took all from above and purchased a great one.
The Plan
The debt that we have is small, like I said we have no credit card debt. Well, I really should not say it is small there is the house, one car, and my student loan. Wow, that looks like nothing typing it out. Southern man came up with a plan to get us out of debt faster. I need to mention that he is a big Dave Ramsey fan and it is his method we use. So, we paid off the van the car is next any extra money earned goes toward the car payment. We both have hobbies we make a little money with and right now that is where it goes. My student loans are next and then the house. Southern man figures we can have the car paid off by March, whoot!!! I hate being in debt, before we moved to Louisiana we were debt free. What a great feeling.

Due to the way we handle finances I get to do what I love to do writing. I love blogging and freelance writing which earns me a small income, but allows me to work from home. Helping others is a great passion I have especially when it comes to living a natural healthy life. Having financial freedom relieves the stress of worrying about money and allows us to be happier and thus healthier.
Motivation
The Bible says: John 10:10 The thief cometh not, but to steal, and to kill, and to destroy: I come that they may have LIFE, and that they may have it more abundantly. Remember this verse every time you think you are suppose to be in debt because that is what our society does. Forget about what everyone else has and remember odds are they are probably in debt up to their wazoo. You can have what you want in time, good things come to those who wait.
We were not created to live mediocre lives, but one of abundance. It's your life, live it to the fullest.

I Need to Make Some Money

I love to write, well heck that is why I blog, and I have a book in the works. The book has a long way to go, and is not a for sure thing for cash. So, I started searching for some freelancing jobs. There alot of sites for freelancers, but some do not offer alot of jobs, require you to pay, or make you jump through hoops. Elance is not like that, though you do have to bid on jobs, and are only allowed to bid on so many unless you pay.
It amazed me to find out that there are people who pay others to blog for them, not me. Post on Facebook, solicit on blogs, comment on their blog, I was like what? Oh and love the posts $1.00 for 500 words, really? If you think writing unique, quality pieces is worth only a dollar for 500 words write it your self! Oh and love those who want you to write an e-book for them. Soooo let me see I write an e-book for you for a flat rate and you sell it making all the profit. Forget that I'll write the book, get credit, and make money off of it. Than you have the students who want you to write their paper for them. Believe or not there are freelancers who bid on these types of jobs, personally I think they are selling themselves short.
Bidding is tricky because you have to submit the time it will take to do the job. Jobs are not always as easy as I thought they would be, and what they are looking for is not always clear. Take for instance the job I worked on for four days that was suppose to take three hours. It sounded easy enough, but the information left out for the meal planning was that it had to be for three weeks of meals and snacks for 1200-1499 calories.
It was for a Beach Body coach, and a new challenge they have called the 21 day fix. I loved the idea so much I am going to become a coach, don't run off and buy, wait until I become a coach, so I can coach you. I have some great ideas for this challenge that I will share once I become a coach.

Last, but certainly not least, for the first time I will be selling some homemade products at the farmer's market tomorrow with a great friend. I hope to make enough to become a beach body coach. We also want to start a small business/hobby out of our homes making organic lunches which we will deliver to businesses.

Beans, Sprouts, and Writing
This is the third day of rain, and the back of the yard will be soaked for weeks. That's right WEEKS, not days, but weeks. With us being gone most of the month, mowing needs to be done, and it won't. Meanwhile we will have all kinds of weird plants popping up which will make hard to mow once we can.
Enough on the weather my good friend and fellow blogger Mary, from Back to the Basics, Mary's Kitchen, and Mary's Heirloom Seeds sent me some free sprouting seeds to check out. This was month's ago and I just got around to sprouting the broccoli seeds she sent me. She also sent me some mung beans which I sprouted right away.
While sprouting the broccoli I decided to do some research on healthy sprouts. You see I had also sprouted some sunflower seeds, and smelled kind of funny, I learned why. Certain seeds like sunflower, and broccoli leave the hull behind after sprouting. Sprouts should then be soaked in a bowl of water where the hulls will float to the top. These should be removed and thrown away or they can start a fermentation process. Ahhhh that's what that smell was, I did not know this, and thought there might be others who like me did not either, so that's that.

You see the minute we pick our vegetables they start losing nutrients, blanching aids in this process. So, what I am doing is freezing my beans as I pick them until I have enough for a dish, seeds came from Mary's Heirloom seeds also. I'm told there is nothing wrong with doing this, and the woman on the video has said that she has done it. So, you can forget this step, and just freeze them.
Lastly I am working on a book which I never thought I would write because I am a blogger. A book entitles way more thought and words than a blog does. However, I am a believer and capable of hearing my Creator's voice who told me to write about my life before Him, and my life with Him. Believe me it is very different, while there are still troubles I know that He has them all figured out and can now handle them with peace.
I decided to give y'all a look see, and see if I can get some feed back. Don't hold back I am totally about honesty and creative criticism. This is one paragraph from the preface.
Another memory I have of me and my
older brother was not only scary at the time but funny to think about now. We
were playing around the house and for whatever reason decided to go into our
bedroom. While we were in there this big, huge, long, hairy thing with tons and
tons of legs seemed to appear out of nowhere. We both jumped onto one of our
slippers which sat in the middle of the room and clung to each other. I am not
sure if we were screaming or not, but I know I was inside. My brother finally
decide to be brave and found something to poke it with, whatever this thing was
it moved slowly and it was deemed not hungry for two small children. Mom came
in after our coaxing and thought us funny that we would be afraid of a harmless
centipede.

Age is Just a Number

Your age does not determine the youngster you have on the inside, nor your health. Just because I am turning fifty does not mean I am old, ah oh I said the "O" word, forgive me. My grandmother was in her eighties, still driving, busy, and I had to call and make an appointment to see her. I have a dear friend in Tennessee who is raising her fifteen year old nephew, and is in her late seventies. She drives the tractor around her property, grows a great garden, goes camping, hiking, and fishing.
I have decided that when I grow up I want to be like this two magnificent women. Strong, independent and living life to the fullest however, this is going to be somewhat difficult as I vowed never to grow up. I look at grown ups and see them as unhappy, unsmiling, much to serious human beings, and that is not how I want to live.

Age is a matter of the heart, what age do you feel? Me I don't rightly know, I am happy at this time in life. I know and continue to learn new things all the time, and love it. At this point I am even discovering new things about my self, and feel I have purpose.
I know that working out is a big issue when it comes to my health, and feeling good. I believe it is due to doing it for over twenty years that allows me to act like the child that lives in me. I am thankful that I have been taught by the Father how to use His medicine, and food to heal myself.
Until the day I cannot to things physically, it is my life, and I'm living it to the fullest.

Yes, We Can Heal Ourselves
Since I moved to Louisiana in 2010 I have struggled with various health issues. While they have set me back in doing the things I need to do around the house, or working out, I am thankful. Why? Because I have learned that through exercise and food I can heal my self and be healthy.
I have learned so much about my eating habits and how it has effected my health. First I dealt with low potassium, and used Emergen-C to rise my potassium, but was left with no energy. A phone call to my herbalist led me to Hibiscus which I continue to drink two glasses a day, love it over ice.
Then one day I went to scramble eggs and couldn't, nor could I write my name or type. I thought I had a stroke, a visit to the local health store proved I did not. In stead I found out I have familial tremors, it is hereditary, and incurable. After reading a chapter in Rosemary Gladstar's book Herbal Recipes for Vibrant Health
Oh I can't forget the terrible tooth ache which made my lower jaw bulge as if I had a giant jaw breaker in my mouth. For that I found that Oregano Oil
Let me back up a minute my symptoms were sores developing on my finger tips along the nail, and by my cuticles. When our bodies are to acidic the acids start to store them selves in fat cells. I did not gain weight, but fat, even my regular exercise was not eliminating the fat.
I started drinking filtered water, and I am not a water drinking person part of the problem. At a local store in Tennessee geared toward organic foods I purchased a container of mixed nuts, seeds, with some raisins along with a vegetable wrap with hummus. A big animal product eater I cut out a big portion of the items I eat substituting them with vegan products, which I have to say I love. After just a couple of days of my new habits I noticed the fat starting to fade. Each day I see greater results, and guess what I have more energy yeah!!!
A friend of mine told me about a series of videos geared towards health on Amazing Discoveries dot TV called Healthy From the Inside Out. These videos are online, there are thirteen videos in all each over an hour long. Currently I am on the fourth video, and the information I am learning is incredible. All the information I am hearing so far makes sense, you know the reason most people have excess weight is due to toxin in the stomach? We detox various organs in our bodies, but not our stomach's.
I am not big on drinking water, or eating vegetables, but since I have started I now crave them. I look forward to getting healthy by eating the foods I was created to eat. There are days when I eat no meat at all and others were I do as directed in the book on Combining Foods by garnishing with meat. Instead of using vegetables as a garnish the book states we should garnish our vegetables with meat.
If you are experiencing a health issue I encourage you to watch the video series and learn how others healed them selves by changing their diet and regained better health. We do not need drugs to muff symptoms, we need to learn how to heal what is allying us and we can do this. If we can not be completely healed we can at least have a better quality of life.

Vacation, News & Vegan Spread/Dip

My daughter and I had some great girl time shopping, and she did my nails for my step son's graduation. The teens stayed with her and they stayed up until the wee hours of the morning playing video games and watching movies. She was most generous to give up her king size bed for them, and take the couch.
We are thinking about moving back which I would so love. Being closer to my girl, and the southern man's family would be great. That is in the future, I pray.
We visited the southern man's son and his beautiful family. There is Ethan who we met for the first time. A walk to the lake, it was great to walk those Tennessee hills again.
They have three boys, but the oldest was in school. These kids are so lucky to have such awesome parents. Both of them are in the medical field, they have different schedules so one of them is always with the kids. The next day mom had to work so it was dad who had the boys. We had breakfast with them, and then I was off to visit with my girl while the teens hung out with southern man at the hotel.
The 17 year old was being a bugger bear and wouldn't participate in our photo shoot, can you believe that young man is only 15? Actually southern man and I both forget the camera at home, so he bought a new one and was trying some things out. After our girl time some pizza for them, we went to see the southern man's oldest grand-son at his Tae Kwon Do class.
From West Tennessee we headed to East Tennessee for southern man's youngest son's graduation from med school. He recently became engaged to the young woman he has been dating while there.
Don't you just love their graduation attire, she took hers off, I think it might have been because she fell and hurt her hand. Good thing they are both doctors, she is in pediatrics, and he is in emergency. I love that he is open to alternative medicine, but don't know if he will use it or not.
Okay now for the news, while I was on vacation I did alot of praying on a job. We will loose half of our income at the end of the year, and I have been thinking about ways to make it up. I have been doing some freelance writing, but that is not going to cut it. So, through pray I have decided to follow the Father's plan for my life and write books. That means less time for blogging, blog hops, link ups, g+, and Facebook. I will miss these things as I consider other bloggers to be family. I love reading blogs, learning from them, as well as sharing in other bloggers lives. However, this is what I have been created to do, and love doing.
So, you might be wondering what I will be writing, well first is a book I started about my life from a non-believer to a believer. Next I want to write a cook book, while on vacation I read two great books, they were small and one was a cook book, that have inspired me to create new tasty dishes. Just today I created a vegan dip/spread that came out amazing.
Does that look good to you? I think I also need to work on my photo skills, trying. Maybe I need to check out the new camera there is alot more you can do with it.
I love this recipe, I am not posting it here for two reasons. First I might use it for a freelancing job, and two it will go in the book. However, I will tell you what I used vegan cream cheese, vegan mozzarella cheese and vegan mayo, salt, pepper, garlic powder, smoked paprika, chives, flax seeds, bee pollen, nutritional yeast, carrots, onion, cauliflower, cucumber, tomato, greens, red and green pepper.
As you can see from the photo it can be used as a dip or a spread. I spread some on a wrap, It was messy, but so freaking good, next time I will use less spread. I think a combination of the spread and the juices from the cucumber and tomato are what made it so messy.

Eating to Improve PH Levels
Okay so my PH has been running between 5.5 and 6.0 normal is 7.0. So, yes I am too acidic, trying to get normal is not easy I am finding. Working out hard to make sure I sweat real good, drinking lemon water, switched my mayonnaise and butter to vegan.
I love, love butter and mayonnaise, nothing like a little baked potato with my butter. Love a little egg in my egg salad with my mayo, okay you get it. Down side both are acidic, and I had to make some changes. I visited my local health store and asked if they have tried two of the products I was looking at, which they said they use them on a regular basis. So, I purchased Earth Balance natural buttery spread soy free, and Follow Your Heart soy free vegeniase.
Have to say for those who don't know soy is the most highly mutated food, 93%. If you read your labels you will see it is in almost everything.
Okay I have a new love, vegeniase, sorry mayo our relationship was just unhealthy. It is amazing, I even got the southern man to change over from the Woodstock Farms brand we have grown to love. So, this morning I made myself a energizing breakfast wrap, which by the way started to fall apart. I believe it was the butter from the eggs, and vegeniase, to much moisture, but it was good, and filling.
Ingredients
3 cage free eggs
Mix of greens such as spinach, lettuce, you get it.
1 slice onion
1 Avocado
1/2 tsp of the following bee pollen, flax seed, chia seed, nutritional yeast
Follow Your Heart vegeniase
Ezekiel grain wrap
I scrambled my eggs, and cooked them like an omelet, stays on the wrap better. While that was cooking I put the greens, onion, and avocado in the food processor.Heavily Spread some vegeniase evenly over the wrap, place the egg on top, spread the processed greens, onion, and avocado on top, and sprinkle with the bee pollen, flax seed, chia seed, and nutritional yeast.
Eggs are also acidic, I was going to add some ground turkey that southern man cooked up yesterday, but meat is also acidic. I had meat yesterday, so I opted for just the eggs. I ate two and a half hours ago, and I'm comfortably full, and energized.
High acidic levels led to other health problems, and I'm thinking it might have something to do with my high blood pressure. Up point the sores that started forming on my finger tips, and by my cuticles, are almost gone. I also purchased some Vitamineral green at the suggestion of my man at the health store, so we'll see. My biggest issue is I love to many acidic foods, and the vegan life is not for me.
Oh I bought a flat of strawberries this weekend, alkaline, to give me some thing else to eat that was not acidic.I made this wonderful pie with some.
Ingredients
1 Can coconut milk
1 1/2 cups raw cane sugar, bad it's acidic, next time I'll use honey.
3 Tbsp Carob powder
1/2 Cup coca chips
1 Pint strawberries
Do not shake the can of coconut milk, just remove the thick cream from the top and put into a blender. You can save the liquid for smoothies if you want. Add the rest of the ingredients and blend on high making sure everything blends well, and there are no chunks of chips left. Refrigerate for about a hour, or until it thickens, pour onto homemade pie crust, or spoon into dishes as pudding. Top with extra strawberries, and enjoy.
This was so good even the 17 year old liked it, southern man and the 15 year old not so much. Hey, that's okay there was more for me and the teen. I was going to make some whip cream with the coconut milk, but you have to refrigerate it for 24 hours. Needless to say I will be keeping a can in the fridge for when I just think hey I wanna make this.

Have to say for those who don't know soy is the most highly mutated food, 93%. If you read your labels you will see it is in almost everything.
Okay I have a new love, vegeniase, sorry mayo our relationship was just unhealthy. It is amazing, I even got the southern man to change over from the Woodstock Farms brand we have grown to love. So, this morning I made myself a energizing breakfast wrap, which by the way started to fall apart. I believe it was the butter from the eggs, and vegeniase, to much moisture, but it was good, and filling.
Ingredients
3 cage free eggs
Mix of greens such as spinach, lettuce, you get it.
1 slice onion
1 Avocado
1/2 tsp of the following bee pollen, flax seed, chia seed, nutritional yeast
Follow Your Heart vegeniase
Ezekiel grain wrap
I scrambled my eggs, and cooked them like an omelet, stays on the wrap better. While that was cooking I put the greens, onion, and avocado in the food processor.
Eggs are also acidic, I was going to add some ground turkey that southern man cooked up yesterday, but meat is also acidic. I had meat yesterday, so I opted for just the eggs. I ate two and a half hours ago, and I'm comfortably full, and energized.
Oh I bought a flat of strawberries this weekend, alkaline, to give me some thing else to eat that was not acidic.I made this wonderful pie with some.
Ingredients
1 Can coconut milk
1 1/2 cups raw cane sugar, bad it's acidic, next time I'll use honey.
3 Tbsp Carob powder
1/2 Cup coca chips
1 Pint strawberries
Do not shake the can of coconut milk, just remove the thick cream from the top and put into a blender. You can save the liquid for smoothies if you want. Add the rest of the ingredients and blend on high making sure everything blends well, and there are no chunks of chips left. Refrigerate for about a hour, or until it thickens, pour onto homemade pie crust, or spoon into dishes as pudding. Top with extra strawberries, and enjoy.
This was so good even the 17 year old liked it, southern man and the 15 year old not so much. Hey, that's okay there was more for me and the teen. I was going to make some whip cream with the coconut milk, but you have to refrigerate it for 24 hours. Needless to say I will be keeping a can in the fridge for when I just think hey I wanna make this.

A Divine Salad With a Lesson

I called a local farm I have done business with at the farmer's market to obtain some lamb for Passover. There w.as no answer, I left a message and two days later still did not hear back. They have a farm with goats, lambs, and cows, so I'm sure they are busy. I called back again with the same results, I know they are busy, but we are talking money here. Not only that, but if I couldn't get the lamb from them, someone else was going to Sam's Club to buy it NOOOOOOOOOOOO!!!! I had to get that lamb from this farm, there was no where else.
Finally I decided to email them, and that night he called me back. Now Passover was Monday, I had to pick it up Saturday at the market, and it was Friday, talk about cutting things close. He explained to me that email or texting was the best way to reach them, well this girl don't text. I went Saturday to pick up my lamb roast for Passover, and purchased some ground goat as well. His wife was very apologetic, and thanked me for my patience, then proceeded to hand me some of her homemade feta cheese for FREE!
The other day while at the store I saw some sun dried tomatoes with capers!!! Love capers, but I passed, then went back and bought it along with a mix of organic greens prepackaged. My mouth watered at the thought of those beautiful greens, sun dried tomatoes together in my bowl. Then the thought hit me, the CHEESE! Oh this is going to be good.
The tomatoes soaked with the capers and olive oil tasted divine. I didn't ruin that wonderful taste with anything the olive oil coated my greens nicely, and the feta cheese added that right touch and texture, to make it truly a divine salad.
Lesson patience is truly a virtue, and might even get you some free cheese.
