Homemade Breakfast Sausage & Fruit Topping

I have made breakfast sausage from a variety of ground meats, turkey, goat, and this morning deer.

I started with 1 lb of ground deer, and then add the following. Those who know, know I don't measure it's an eye ball thing, but works great for me.

  • Garlic powder
  • Pepper
  • Onion powder
  • All purpose seasoning 
  • Sea salt
  • Just a small sprinkle of red peppers
  • Black pepper
  • Nice helping of sage leaf
  • Minced garlic
I mix all that together and make two patties for my husband's breakfast tomorrow, and a baby one for me to try.


Then I cook up the rest for me and the teens, once that is done I add six eggs, two each. I pull some out for my self, and then add some shredded cheese for the boys. I keep shredded Mexican as we use it for alot of different things, plus I love having more than one cheese present.





I turn off the heat and just mix it all in. I love cheese, but it don't love me so I watch how much I eat, and seeing as I had some yesterday I opted out :(.

During Christmas I had bought some organic strawberries at the farmer's market that melted in your mouth. I wanted to make a cheesecake, you know that love of cheese, and asked the boys what kind they wanted. We decided on a strawberry, and I set out for a recipe, I opted for a strawberry topping, and used the recipe from here to create it, so easy.

Strawberry topping
  • 1 pint or 2 cups of fruit
  • 1/3 cup of cane sugar
  • 1 tsp vanilla
Roughly chop fruit of choice, not to small. Combine fruit, sugar, and vanilla and stir occasionally, until you see the juice start to form. At this point you can mash down bigger chunks to produce syrup if you wish. Remove from the burner, important for us with electric stoves, and let cool. Refrigerate, and let sit until it thickens.

Okay this is not what it says, but once again what recipe. You can always go to the link to see how it is suppose to be done. It all depends on you, and what you want to use it for.


You can see it sits nicely upon the cheesecake, but how about for mixing it in with some plain yogurt? I used a frozen three blend berry mix for the yogurt, I know, what!!! frozen????? Once again I gave the teens the option from everything I had available, and that is what they chose. Judging from the bowl below, I don't think they liked it.


You can use this recipe for making a topping, or syrup for anything. I have some of the fruit left and I got a request to put it into a pancake mixture, hmmm we'll see how that works. The original recipe has an image of waffles with the syrup on top. I think it would also be good over ice cream, how would you use it?

  1. Vension is such an healthy choice of meats. Sounds delicious and nutritious. I have always loved cheesecake and this recipe sounds like a gem with the organic strawberries. Pinned and sharing on google.
