Chicken Salad or Egg Salad


We love both egg salad and chicken salad, but more so we like to combine the two. Now that I have a food processor I don't have to do the eggs and chicken by hand. Down side, I like chunks, and using the food processor I don't get them. Oh well making it is less time consuming, so I guess it is the sacrifice I have to make.

As you can see it doesn't look real pretty. I suppose I could have taken the time to set something up to make it look real pretty, but sorry it's not in me. You just have to trust me it is amazing.

We make it pretty much the same way all the time, okay maybe not. For this batch I used the left over chicken the southern man didn't eat, 5 eggs, mixed greens, minced garlic, onion, chives, sea salt, black pepper, paprika, dill weed, all purpose seasoning, mayonnaise, and yellow mustard.

I put the onion, chicken, mixed greens, and eggs in the food processor, than transferred it to a bowl. Once in the bowl I added the rest of my ingredients.  Both egg and chicken salad can be made in various ways, and eaten in various ways also. You can make a sandwich, eat it will crackers, by it self, or over a bed of greens.
